VEGAN BANH MI - Bánh mì chay (Recipe)
Description
"Banh mi chay" a.k.a Vietnamese sandwich with vegetarian fillings
►Ingredients:
**For vegan pate :
1 eggplant, sliced
100 g soaked white beans or lotus seeds (white beans make creamer pate)
10 cashew nuts or walnuts or almonds, soaked
Minced leek and lemongrass
1 tsp sugar
2 tsp soy sauce
1/2 tsp salt
4 tsp melted butter
**For the pickles
medium carrot Cut into strips
daikon radish Cut into strips
1 tsp salt
1 tsp vinegar
**Charsiew filling*
1 block tofu
3-5 sseitan or wheat gluten
1 tsp minced lemon grass
1 tsp minced leek
1 tsp char siu powder
1 tsp vegan oyster sauce
2 tsp water
1 tsp sugar
1/2 tsp salt
1/2 tsp pepper
